Yummy Mandarin Sweet and Sour Sauce Recipe


8c. tomatoes, peeled & diced
7c. sugar
1/2 c. soy sauce
3c. vinegar
3 to 4 c. onion chopped
4c. peppers chopped
4c. pineapple tidbits (save juice to use with water below)
3/4 to 1 c. non-instant clear jel
1 c. sugar
1 c. cold water (& pineapple juice to make 1 cup)
(you could probably try just 6 c sugar and reserve the 1 c of it for the clear jel)

Place the first 7 ingredients in large kettle and bring to boil. Then mix together the clear jel, & sugar, then add water..stir well and add to the kettle. Continue to cook until thickened. Bottle in pints. Process in boiling water bath for 35 minutes. Makes about 14 pints. Serve warm or cold over cooked chicken and rice or whatever you like.

Is this your original recipe?
I was just wondering how you came up with the canning times and quantities of ingredients. I am very interested in canning something similiar, but wanting to make sure it's "safe".
There are so many recipes on the 'net that aren't, I prefer to be cautious.

Would love to see a response!
